i remember the last time i had pan de coco (coconut bread) was 16 yrs ago. i didn't even like it that much coz the bread was difficult to bite and the coconut jam was a bit dry. then came kopi roti and i learned to love their kaya toast which are toasted bread spreaded with butter and kaya jam. kaya tastes just like coconut jam without the coconut bits.
but this one is the classic pan de coco you can buy in neighborhood bakeries. thanks to B's mom's friend, a bakery owner, who gave us these soft freshly baked breads that i fell in love with.
because of the mushrooming of coffeehouses and well known patisserie chains (french baker, bread talk, bizu, etc), i almost forgot that there are still these small bakeries that offer a wide range of pinoy comfort bread.
