bangus (milkfish) is my fave fish even though there's a million bones in it. very versatile, very tasty. and for me, the best way it's cooked is inihaw (grilled) with tomato & onion filling. most of us filipinos probably know of this dish but here's an alternative if you're one like me who is too lazy to set up the griller.
ingredients: 1 bangus cut on the backside (for this one, i used slices of bangus belly), 4 tomatoes chopped, 1 onion chopped
procedure: mix chopped tomatoes and onions and season with salt and pepper. preheat oven. season the fish with a little salt and place in a baking dish. stuff the tomatio-onion mixture inside the bangus or if you prefer to use bangus slices like i did, pour it over the fish. cover the baking dish with aluminum foil to prevent it from drying up (my family loves the juice that comes out of the fish). cook for 45 minutes. serve with vinegar-kikkoman-sugar-chili sauce.
