mom and dad went out on a date so i was in charge of dinner tonight. with only 3 people eating and this day being a rest day, i don't wanna put all my energy into doing a complicated dish. yesterday's market day was cancelled coz mom was sick for the whole week. that's why our freezer's almost empty so i chose something that's very easy to cook, tinapang galunggong aka gigi. wanting to make the dinner enjoyable even though there's just 3 of us, i did a side salad to add life to the fish.

i just made use of the available stuff in our kitchen: romaine lettuce, watermelon, black grapes & cheese. it's very very simple to prepare coz you just need to cut and mix everything. i also saw some nuts in the pantry and came up with an idea to moderatly crush a bit of it and add it to the salad for that extra crunch.

i wanted to make a vinaigrette dressing but there's no available ingredients around. mayonnaise did just fine. the result? good dinner and good conversation with my brothers + full blown tummies.
