when i was still in la salle, one of our usual lunch place was this resto along taft ave called la casita. i would always order my fave cordon bleu whenever we're there so everytime i hear cordon bleu, i always have this nostalgic feeling of being in that resto again. btw, it's also the lunch place where i always see my ultimate college crush. teehee.

the term cordon bleu sounds really sophisticated and the dish itself seems like such complicated work. having been hoarding buying chicken breast fillets for b's place for health and diet purposes, i took it as a challenge to be able to create something special out of it and making chicken cordon bleu is one of 'em. so last wednesday night, i found myself making 2 batches in less than an hour and i was quite surprised at how easy it is to make. what's also good about this dish is you can make a batch, store, and grab it on days when you're pressed for time or just too lazy to do food prep.

ingredients: 1 pack of magnolia chicken breast fillet, 1 pack of sliced ham, kraft eden cheese, flour, egg, bread crumbs

procedure: pound chicken breasts to make it flat. season with salt and pepper then set aside. slice ham in half and cheese into strips. place ham and cheese on top of the breast and roll. use toothpick to hold them in place. roll each piece in flour, then in beaten egg, then in bread crumbs. deep fry over medium heat. serve with mushroom or chicken gravy.
